The Traditional Food of Paris, France:  Unbelievably Creative

Paris has a record of having some 9000 restaurants and that's quite something to chew on.  During a brief holiday or for years you can't try them all.  These restaurants offer the best of Paris in traditional and haute couture food.  Now you know why the best chefs have been trained in Paris to master the best of regional recipes.

Where to Eat

The travel brochure lists the top or fancy restaurants in Paris.  Get real! There are places that won't get you broke trying the Paris food couture.  The street version of classy dishes is a squeal.  These are just as hoity-toity as they come but served without much fanfare. 

The Parisians start off the day with baked goodies - baguette, brioche, and fruit buns.  That's the usual breakfast for the majority. Start with the traditional breakfast. These days, restaurants and coffee shops serve croissants, a flaky rolled pastry, to go with coffee.

Orange juice and creamy coffee goes with the breakfast offering.  No eggs or veggies, mind you.  But if you miss your usual bacon and eggs, you can ask for them for additional cost, of course.  To save on money grab buttered baguettes or croissants and a cup of café au lait and take yourself to the park.

If you are lucky to get invited for breakfast, your host might stun you with the baked goodies and loads of butter and creamy café au lait.  Lunch would be steak with creamy potatoes, so creamy you wouldn't believe that potatoes can get this fluffy.   

Lunch might consist of easy to prepare beef stew, rooster cooked in wine or coq au vin, preserved duck the Aquitaine way, bean casserole or cassoulet, mutton stew, or pork and sausages stew.  Hosts always have braised venison for their table. 

Red meat from roe or fallow deer are marinated and the longer the better to flavor and soften the meat. The marinade consists of olive oil, red wine, sliced onion, juniper berries, allspice, bay leaf, and parsley stalks.  When cooked in seasoned stock, the meat is sliced and served with vegetables.

way to cook this is to cook this real slow.  The meat used is expensive; one can use low-cost beef cuts such as beef with marrow.  This is a national dish, eaten all the time in most homes because it is not fussy to prepare.
